The datil pepper - ever heard of it? Until recently this wonderful pepper was seldom found outside the southeast, particularly Saint Augustine, Florida, our nation’s oldest city. Brought over to the New World in the late 18th century by Minorcan immigrants, this small pepper is similar in strength to a habanero, but packs a sweeter, fruitier flavor. This table sauce is certainly assertive, but its emphasis is not on heat. Rather it's on the unique flavor of the datil pepper. Founder Tim Bucolo sources them locally then slow smokes them to fuse the inherently sweet flavor of the pepper with natural mesquite. There's no wrong way to enjoy this sauce but we can attest it's a fine friend to New England clam chowder.
