It's spring which means it's sugaring season which means it's the most wonderful time of the year for Eric Sorkin. "We work all year long in anticipation of the roughly 20 good ‘sugaring’ days that come in the spring," says Eric. "Out of those few days, there are usually two or three sap runs that result in the most exquisite syrup of the season.” Hard work yes, but it pays sweet, sweet dividends. Eric and his wife Laura don't stop at sweet though. With the syrup harvested from the 81,000 (!) trees they tap they've created a line of infused, smoked and barrel-aged syrups that have us looking beyond pancakes + waffles. Cocktails anyone?
Details: Duo includes two 250ml maple syrups -
- Bourbon Barrel-Aged - Organic maple syrup aged in recently emptied Bourbon barrels. The syrup draws in the essence of the Bourbon without the alcohol.
- Pecan Wood Smoked - What the what? Yes, smoked. Through a proprietary method Runamok has developed a smoked maple syrup that delivers background notes of smoke and caramel to any dish or cocktail. Try it over apple crisp or put a dab on Stilton and serve with crackers.
