Off the coast of North Carolina sits Hatteras, an Outer Banks barrier island. In addition to being pristine and remote, Hatteras also also happens to harbor ideal conditions for harvesting sea salt. Warm gulf stream waters meet the cool Labrador current resulting in water high in both salinity and mineral content. Husband and wife team Brian and Shaena recognized the potential while Brian was stationed in the Coast Guard at Hatteras Inlet. They began testing different evaporation methods before landing on the sturdy solar ovens they use today. They evaporate their source water slowly, never boiling it to preserve mineral content, yet are capable of withstanding the area's frequent hurricanes and nor'easters. Besides it's enviable hometown we love this salt's course, large flake, perfect as a meat rub or finishing salt for salads and cookies.
