If you're familiar with South Asian cooking, ghee might be a staple in your kitchen. If not, it certainly deserves to be. Made by clarifying butter, which removes milk solids and water, ghee has a much higher smoking point than regular butter making it ideal for high-heat cooking. It's also lactose-free which means those who don't get along with dairy can indulge and enjoy. Food chemist Grace Zuccarello began making ghee in 2013. She begins by sourcing organic, grass-fed cream from small farms in upstate New York. After fermenting for 2-3 days Grace churns the cream into butter and then clarifys into ghee. We (knock on wood) don't struggle with dairy intolerance, nor do we adhere to the paleo diet, but we keep coming back to these wonderfully aromatic, rich, nutty ghees because they're simply delicious.
