Homesteaders Teresa + Rustin Gooden first harvested salt from the Carolina coast in 2012 for a Memorial Day pig roast. They smoked a batch alongside the meat and when the results nearly upstaged the main event, Bulls Bay Saltworks was born. Today Teresa + Rustin pull sea water from Cape Romain, a protected Class 1 Wilderness Area (there are only 186 in the states) and evaporate it with solar power to yield delicate, crunchy flakes. For the Bourbon Barrel Smoked Flake, Charleston neighbors Bittermilk donate aged oak bourbon barrels. The wood smoking imparts a mildly smokey, sweet finish that lends wood-fired flavor 'in a pinch'.
